Steve Ettlinger takes us on an eye-opening journey into the ingredients found in common processed foods. Ettlinger presents an engaging first-hand account of the roots, and the manufacturing, of the ingredients that are found in most familiar food products— ranging from snack cakes to soups, breads, and beverages — touching on issues of interest to foodies, scientists, and diners alike.

All students who declare the Dual Major in EcoGastronomy must spend a full semester abroad, most likely during their junior year. The University of Gastronomic Sciences (UNISG) in Pollenzo, Italy, will serve as the site of this foreign experience.

The Dual Major in EcoGastronomy integrates UNH strengths in sustainable agriculture, hospitality management, and nutrition to offer a unique academic program emphasizing the interdisciplinary, international, and experiential knowledge that connects all three fields. From growing and preparing food to getting first hand experience in international food cultures and issues of food security, the program provides students with an integrated academic experience.
